A vitamin is an organic compound required as a nutrient in tiny amounts by an organism. A compound is called a vitamin when it cannot be synthesized in sufficient quantities by an organism, and must be obtained from the diet. Thus, the term is conditional both on the circumstances and the particular organism.

A mineral is a naturally occurring substance formed through geological processes that has a characteristic chemical composition, a highly ordered atomic structure and specific physical properties. A rock, by comparison, is an aggregate of minerals and need not have a specific chemical composition. Minerals range in composition from pure elements and simple salts to very complex silicates with thousands of known forms. The study of minerals is called mineralogy.

So basically, minerals are found in the earth and make up rocks and vitamins come from food (and vitamin D comes from the sun).

Among other things, vitamins contain organic components (meaning they have carbon in them) and minerals are just like what they sound like, stuff that comes from rocks! Meaning INORGANIC materials.

Humans are made up of components that can be found in plain old dirt. (And a WHOLE lot of water.) Getting the right balance of those components is the challenge of eating in our daily lives.
