Vegetarian tacos! Make them the same was as usual, but use Soy crumbles instead of meat. You can find this in any supermarket. Add a little water to the soy, add taco seasoning and cook till the liquid is absorbed.

In the meantime, heat up taco shells. Serve with shredded lettuce, tomatos, salsa. fat free sour cream and cheddar cheese.

I love black bean chimis. I recently found out that refried beans have lard in them so the safest is to eat black beans or cook the beans at home. homemade simple salsa:

5 or 6 roma tomatoes, seeded and medium diced
1 medium white or red onion, medium diced
1-2 jalepenos, minced finely(seeded and deveined if you want less heat)
a small bunch of fresh cilantro(or parsley), finely chopped
course salt
fresh pepper

mix all ingredients together and season with salt and pepper to taste. serve immediately for best flavor and texture(the tomatoes will get soggy when refrigerated). serve with tortilla chips. simple, but yummy! also great the next day mixed with diced potatoes and baked in the oven. :-)
