Veggie Patch Veg-Ka-bobs
3 green peppers
3 red peppers
6 large white or red onions
1 quart cherry tomatoes
2 packs Veggie Patch WOW It’s Not Beef Tips
2 packs Veggie Patch Buffalo Wings
1 jar barbecue sauce


Cut red and green peppers and onion into bite size chunks, and place next to cherry tomatoes. Open Veggie Patch Wow It’s Not Beef Tips and Veggie Patch Buffalo Wings. On shish-ka-bob skewers, poke a Veggie Patch beef tip or wing, followed by a colorful vegetable. Repeat. Create a colorful pattern all the way down the stick. Brush on your family’s favorite barbecue sauce. Place on the grill, rotating every 1-3 minutes, depending on the intensity of the heat. When golden brown, push the Veg-Ka-bob off the skewer and serve with rice and a salad for a delicious backyard meal! Serves six.

If you want to add tofu, first marinate it in a type of sauce you like for about an hour so the shish-ka-bob won't taste just like grilled veggies. Tofu will basically take any flavor you want, so be creative with the other veggies too!

I use the little grape tomatoes, chunks of squash, onion, green peppers, and brush with butter prior to cooking.
Chunks of onions, cherry tomatoes, chunks of bell peppers and squash all marinated for a few hours in honey mustard dressing before grilling.
green, yellow, and red pepper, onion, pineapple, cherry tomatoes (great), jalapenos, squash and zucchini are good also if you cut them right. You can marinate these in italian dressing and some worstershire sauce and they are great

If you eat fish - then shrimp are good also. These are just vegetarian ideas.

Mongolian Shish Kabobs

This simple activity blends traditional shish kabob skewers with personal sauces, like a Mongolian barbeque, hence the name.

INGREDIENTS:
Tofu chunks, pre-cooked
Pineapple chunks
Sweet potato chunks
Mushrooms
Zucchini slices
Cherry tomatoes
Dipping sauces such as hummus, peanut sauce, ranch dressing

PREPARATION - Select your favorites and thread on skewers. Grill until browned and soft or bake 30-40 minutes at 325 degrees. Provide a variety of friendly dipping sauces, such as ranch dressing, peanut sauce and hummus.

I would go to Foodnetwork.com. They have a huge grilling section and are always getting more recipes every day. Personally we have grilled bell peppers (red, green), yellow squash, zuccini and oinion (just to flavor the others), and corn. Get small corn cobs and incorporate them with your other shish-ka-bob items for unique eating.

An nice vegetarian shish-ka-bob that i always make has carrots, tomatos, carribean jerk marinated tofu, red and green bell peppers, and a carribean jerk glaze.

To marinate: just follow the directions or leave them marinated over night.( better flavor)

Next just prep the veggies then put them on the sticks.

Now its time for the glaze. Get fresh cilantro and chives and chop then up. About a pinck of chives and half a hand full of cilantro. Finly chop those and put them in a bowl. Now get a 1 cup of carribean jerk marinate. Mix it up then with a grilling brush, glaze the kabobs.

To Grill: put them on on medium heat and just watch them.

This recipe works great with chicken and beef too.

If you want the flavors to be strong try adding the little baby tomatoes, peppers, artichoke hearts and baby potatoes that have been rolled in a bit of chille de arbol (be CAREFUL!! This stuff is HOT :)

You can also have a fruity shish-kabob. Certain fruits will become sweeter when grilled like apples, peaches, and pineapples you can mix these in with some vegetables for an unforgettable burst of flavor. You can also just add fresh fruit for a more breezy feel to the food.

Okay, yes you can do a vegetarian shish-ka-bob but why not invite your meat friends over, too, and do a little of both?

Here is a great shisk-ka-bob recipe. You eat the veggies over some pasta sprinkled with crumbled feta, and your meat friends can eat the meat and veggies over pasta, too, sans the feta. Add a Greek Salad, a Key Lime Cheesecake, and some Honeydew Margaritas and you've got yourself a PARTAY!


Use the Key Lime Cheesecake Recipe on Epicurious.com that calls for the stewed dried fruit, not the one with the mango curls, (although you can use the mango curls as a garnish). Forget the dried fruit stuff, though. Bleah! Or use the white chocolate strawberry mousse recipe they have. YUM. Scroll down to the comments by me, Lori from Kimberton, to see my additions to that recipe.

If you are vegan I'll have to rethink the desserts but you can use some marinated tofu baked in the oven, on your pasta, instead of lamb. I think you could probably marinate some seitan and put that on skewers.

Shish Kebab
Serves 20

Marinade:
3/4 cup olive oil
9 ounces vinegar
3 ounces FRESH lemon juice
1 1/2 tbsp. minced garlic
1 /2 tbsp. pepper
3/8 tsp. marjoram
3/8 tsp thyme
3/8 tsp. oregano
3.75 lbs of 1" pieces of cubed lamb

Veggies:
40 mushroom caps
40 blanched, 1" pieces of green pepper
40 cherry tomatoes
40 pearl onions

Marinate meat several hours or overnight. Next day saute mushrooms slightly. Blanch peppers and onions. Skew like this: tomato, lamb, mushroom, onion, lamb, pepper, onion, lamb, papper, mushroom, lamb, tomatoe. Keep in marinade until ready to broil. If you use wooden skewers soak them for 30 minutes before using so they won't burn!

Drain well then place under hot broiler or on BBQ grill for about 10 minutes turning to cook uniformly.

For vegetarian skewers omit the lamb.


Greek Salad

1 large head of Romaine
? cup olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced
salt and pepper to taste
3 medium sized ripe tomatoes, peeled and chopped
1 small cucumber, peeled, halved, seeded and sliced
1 small red onion, chopped
? cup chopped fresh parsley
6 oz. Feta, crumbled
anchovies, optional
Greek Calamata olives

Combine the olive oil, lemon juice, garlic, salt and pepper. Set aside.
Clean and tear Romaine and place in salad bowl. Garnish with chopped vegetables, olives and feta. Just before ready to serve pour the dressing on the salad and toss.

Honeydew Margarita
Makes about 7 cups

Lime Wedges
Kosher salt or sugar

Blend:
4 cups ice cubes
3 cups honeydew melon, peeled, seeded, cut into chunks
? cup tequila
? cup honey
? cup fresh lime juice

Garnish
Honeydew spears
Sprigs of fresh mint

Rub the rims of 4-6 cocktail glasses with lime juice or honey then coat with sugar or salt. Pink colored sugar looks pretty with the green color of the margarita.

Place the ice cubes, honeydew, tequila, honey, and lime juice in blender and blend until slushy with no lumps.

Pour into glasses and garnish with spear of honeydew and sprig of mint.
