I believe this is because the frozen spinach is blanched prior to being packaged and frozen. They have to do this to fit it all into the package.
Cooking the spinach makes the delicate leaves lose much of their fiber and nutrients....

I would imagine that the processing would make the spinach lose nutrients and fiber. The closer to fresh and organic the better. Now that spinach has been cleared that is.
anytime you do anything "unnatural" to fruits and veggies, they lose some of their nutrients. even when you cut into an apple, you lose nutrients. thats why so many people preach the benefits of "whole foods" because when you eat whole foods, not processed, you aren't losing the true nutrients of the foods that are needed.
that being sad, you should always use fresh produce. if that isn't available, use frozen. never and i mean never use canned, unless it is something you can rinse. rinsing canned produce will eliminate almost all of the sodium.
...It's also very crunchy when eaten.
