This is the best vegan key lime pie recipe ever. In fact, it's my favorite dessert. This recipe is so tasty that a famous vegetarian restaurant in the DC area (the Vegetable Garden) uses it, but it's simple enough to make at home:
Vegan Key Lime Pie
1 (12 1/3 ounce) package mori-nu firm silken tofu (I use lite)
8 ounces soy cream cheese
1/2 cup key lime juice
2 teaspoons freshly grated lime rind
2 (4 ounce) packages mori-nu mates vanilla pudding mix (must be this brand--it's made to go with the tofu)
1 tablespoon liquid sweetener, to taste (I use honey but that's not vegan!)
1 9 in.baked pastry shell or 9-inch graham cracker crust (I prefer graham)
1. Drain any excess water from the tofu.
2. Blend tofu and lime juice in a processor or blender until creamy and smooth.
3. Add the rest of the ingredients (except crust!), and blend again until smooth.
4. At this point, I had to transfer the mixture to a bowl and beat on high speed with an electric mixer, since it was too thick and stiff for my blender.
5. Pour the mixture into the crust and chill 2-3 hours or until firm.
6. This sets up very firm.
7. It also makes a great pudding or little tartlet filling for fancy desserts!
And this chocolate vegan silk pie is a classic. You can make it straight up, or add a little bit of cherry, orange, or almond extract for a nice twist. It's super easy, and no one will guess it has tofu:
Easy Chocolate Silk Pie
1 (12 oz) pkg tofu
12 oz chocolate, melted
1 tsp vanilla
8 inch prepared pie crust -- graham cracker or pastry
Puree tofu in processor (mixer may not blend as creamy). Add melted
chocolate and vanilla. Pour into prepared pie crust. Refrigerate.
