OKRA AND GREEN PEA CURRY

SERVES: 4
ingredients
3 tablespoons cooking oil
2 onions, sliced
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon fennel seeds
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1/4 teaspoon cayenne
1 cup canned diced tomatoes with their juice (from one 15-ounce can)
2 10-ounce packages frozen cut okra, defrosted
1 10-ounce package frozen peas
1/2 cup water
2 3/4 teaspoons salt
1 tablespoon lemon juice
1/2 cup chopped cilantro

In a Dutch oven, heat the oil over moderately low heat. Add the onions and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and ginger and cook, stirring, until fragrant, about 1 minute. Stir in the fennel seeds, coriander, cumin, turmeric, and cayenne and cook, stirring, for 1 minute longer. Increase the heat to moderate. Add the tomatoes and cook, stirring frequently, until no liquid remains in the pan, about 5 minutes.
Add the okra, peas, water, and salt and simmer just until the vegetables are tender, 3 to 5 minutes. Stir in the lemon juice and cilantro.

BAKED OKRA AND CHEESE

2 (10 oz.) pkg. frozen whole okra, partially thawed
Salt and pepper to taste
1 1/2 tsp. butter
4 slices bacon, cut into 2-inch pieces
1 1/2 c. shredded Cheddar cheese

Place okra in a single layer in a greased baking dish. Sprinkle with salt and pepper, dot with butter. Arrange bacon over okra and cover tightly with foil. Bake at 375 degrees for 1 hour. Remove foil. Place under broiler until bacon is brown. Sprinkle with cheese. Cover with foil and bake for 10 minutes.

I've used it as the base veggie for a stew instead of carrots and potaoes , but also with some potatoes.Even the kids liked it with red meat chopped small.Be generous with onions and garlic.Don't over cook it.

boil in water in a couple of minute then remove it if the okra is tender. then dip it in a soy sauce and put a little pepper its yummy

put them in a pot of gumbo
i don't have a specific recipe to hand but try looking for indian style stuff to do with them : as the base of a curry oras part of a bhagi etc.
If you make a curry with them i advise a korma using plenty of lovely bananas!

Chop okra,green tomatoes,and squash,coat with mixture 1/3 cornmeal,2/3 flour and fry .
I like to put cornmeal, salt and lots of pepper into a paper bag. Then toss in some frozen sliced okra. Shake it up really well. Then I dump the bag into a sieve and then fry the okra in hot vegetable oil until golden brown. YUM!
Boil them in a pan with a lot of butter. After cooking throw it out and wash the pan
