i don't know that there is a use for the actual skin, but sometimes and this may just be a southern thing, is people use it to make watermelon pickles. they sound weird but like most things in the south they are good. run a web search for 'watermelon pickles' and you should get a hit.enjoy !

Throw the rind in compost pile. There is a reason why you don't eat the rind. It is bitter and difficult to eat.
If you dont have a compost bin, throw it in the woods.
watermelon rind preserves .dont know how to make them ..can call my grandma and find out for you ..they are really good on biscuits
