20 minute ravioli:
1 onion
1 can kidney beans, drained and rinsed
1 can diced tomatoes
1 pack refrigerated ravioli
shredded mozzarella cheese if desired.
Put your water on to boil and chop your onion. Cook the ravioli according to package directions. While the ravioli is cooking, saute your onion and add the kidney beans, diced tomatoes, and whatever spices you desire (garlic, basil, oregano, thyme, salt and pepper are all good here). Bring to a boil, reduce to a simmer, and wait for the ravioli to finish cooking. Drain the ravioli, add it to the sauce, stir well, and top with shredded cheese. Voila - dinner in 20 minutes flat. :)

No, most people love meat because they have no system of ethics and because they hate to challenge the flawed views that their parents--who also had no system of ethics and hated to challege the views...etc--instilled in them. The average vegan eats far more varied meals than the average omnivore because they're more likely to try recipes from foreign countries and foods that your shallow culinary experience would be unprepared for.

vegetarian shepard's pie..
boil about 7-8 potatoes..then mash them. and put them in a baking pan.
you can use soymilk to mash them with or a little veggie broth or both.
in a skillet saute some mushrooms and onions..and then add tofurkey keilbasa to it..cut into little circles... spread the mixture over the potatoes and sprinkle with real cheese or soy cheese...

Make a nice raw soup. Blend 3 avocados, bunch of spinach, bunch of cilantro, 1/2 red pepper, 1/2 (or less) jalepeno pepper and some water. Blend in blender and serve cold.
