Tofu. You can make everything out of it! Fake meat, cheese, ice cream...
Nuts, in particular almonds; salmon, spinach
As with a normal diet common seance goes a long way. What I mean is that fried cheese sticks wouldn't be a great choice if you were a meat eater just cause its fried. That being said if you were to bread the cheese and bake it in a toaster oven would make it healthier.

For snacks vegetables and dip rock. Make your own dip. Foe example take medium textured tofu and put it into a blender or food processor. There is your protein infested base and from there you can make anything. With that base you can buy jars of roasted red peppers and artichokes with some black olives and make a yummy vegan dip. Instead of tofu you can also use chick pea's. Yummy! Thin out your dip with evoo(extra virgin olive oil) and that will make it vegan friendly. The dip then can be used on sandwiches with fake lunch meats and makes it even yummier.

You can even take the original tofu base and add spinach and artichokes and use the rice dream shredded cheese and have a rock-in spinach dip. The possibilities are endless.

I hope that helps and one of my favorite cook book ever is "Vegetarian Times" complete cookbook. Its a little pricey but very worthwhile. Good luck. :-)

There's a lot to be said for eating a diet high in antioxidants.

Antioxidants:

* Promote eye health and prevent macular degeneration, cataracts, and other degenerative eye diseases. The benefits of antioxidants were examined during the Age-Related Eye Disease Study.

* Keep the immune system in good shape, or boost the immune system when it has been compromised.

* Prevent age-related neurodegeneration (decline of the brain and nervous system).

* Prevent DNA damage and therefore have anticarcinogenic effects (that is, help prevent cancer).

* Have antiatherogenic effects (that is, promote cardiovascular health and help prevent artherosclerosis, heart attacks, strokes, and other cardiovascular diseases). Antioxidants can decrease LDL and cholesterol, increase HDL, and lower blood pressure. The mechanisms behind these effects are not fully understood, and can occur even if the person has a diet high in saturated fat.

Foods high in antioxidants include chocolate (eat sparingly), tea (especially green tea), berries, citrus fruit, green vegetables (brocolli, kale, cabbage), avocado, beans, carrots, tomatoes, spinach, and olives.

A healthy cooked vegetarian meal would be:

A bean burrito, with gaucomole, salsa, and any veggies you might want to add

A healthy vegetarian snack would be:

A smoothie made with your favorite frozen berries, orange juice or soy milk

Brocoli as it prevents cancer! =D
Cooked food is dead food. When food is cooked all the enzymes die. The only way to be healthy is to eat raw food.
No meat, no dairy, stay away as much as possible from processed foods, eat more raw at least 65% everyday of what you eat. When you look on the label and you can't understand the ingredients of the product or worse can't even read it, better not buy it!
Raw vegetables, fruits and nuts and some fatty fish. They are loaded with antioxidants, vitamins and minerals. Since cooking kills all enzymes in food try to eat most of them raw. Raw plant foods contains all the enzymes you need to digest them. When you eat alot of cooked foods your body has to use its own enzymes to digest them. But your body needs these enzymes for other purposes such as breaking down the walls of cancer cells so your immune system can destroy them.
