If you want trellising info, does that mean you are considering planting it?
I think -- to be fair, that Ruby makes a pleasant quaffable wine but not a great wine. You won't get a lot of money for it.
You don't say where you are abd whether you have Ruby planted already, so it is hard to give a sensible answer. There are about 2000 vinifera varieties in usage and if I was planting vines, Ruby wouldn't be near the top of my list. A more promising alternative would be Marselan, a 1961 crossing Cabernet Sauvignon and Grenache that is making some interesting wine in southern France.
HOWEVER - the people I know who have planted Ruby have put it on windswept hills where other vines woudn't grow, as Ruby has good wind tolerance, and is suitable for hot regions.
Gallo has a Ruby varietal that is widely distributed, otherwise I mostly see it as a blender or an own label wine.
Bruce Jack at Flagstone in Sa made an excellent Ruby called 'Ruby in the Dust', but that was a one-off and I don't think any are still available. At least there are none at the winery.
Of course, maybe someone is making a stonking old vine Ruby, its just that I haven't come across any.
Food pairing? Its an easy going red quaffer, what more do you need to know?
If you have a vineyard on a windy hill, consider it. Otherwise if you are in a hot area try southern French varieties like Mourvedre, or some Italian ones.
