If so, can they be used interchangeably?

Also, does the % alcohol depend on the yeast amount?

Thank you

Answers:
Yes BUT, Beer yeast has been cultured to be used for beer and different strains have different characteristics. Brewers who have isolated yeasts that produce excellent results hold on to them with the ferocity of any other trade secret.

Commercial yeast makers have some excellent strains for the home brewer that make good results far more likely

The alcohol % is dependent on the volume of fermentable sugars in the wort. Depending on the yeast strain and micro-nutrients, the yeast will convert the sugar to alcohol until either the sugar is used up or the yeast has met it's thresh-hold.

Other Answers:
no beer yeast come in many different strains
the alcohol is more depended on amount of food for the yeast
sugar or malt is food for yeast practically ,always used bread yeast for brewing beer.
the alcohol comes from the amount of sugar ,

the more sugar you feed to the yeast ,the more alcohol it produces .

and the slow brewing that happens after bottling also makes the drink stronger depending on how many years you leave it standing as one does, with wine

beer is OK after a couple of weeks ,although time in the bottle can still make a big difference to strength and taste
