In China the practice of boiling water and adding herbs (tea) killed off the germs while boiling. There was less evolutionary pressure to become tolerant to alcohol.
Some people of Irish, Italian, Greek, French, Spanish, German, etc. etc. etc. cannot hold their alcohol either. I wonder why that is?
I don't know but alot of Indians (native americans) can't handle alcohol either and they say they descended from Mongolians. So if you find out let me know too.

I thought alcohol tolerance is increased by the habit of consuming alcohol. Like a person who never drinks alcohol would be drunk for a small amount alcohol and a person who used to drink everyday would need much more alcohol to get him drunk. I'm guessing Chinese people are used drinking tea, not alcohol...

ummm...there are a lot of people of many descents that cannot tolerate alcohol. I honestly do not believe that background (specifically Chinese...why just Chinese and not others from Asian descent???) really plays a role in alcohol intolerance.
