Open your can of yams, Bruce, Sugary Sam, Princess or whatever brand you like, pour out the liquid that is in the can. Put yams into a glass baking dish. Turn on stove to 350. While the stove is heating, in a sauce pan or boiler, melt 1/2 stick of butter or margarine with at least a half of a 1 pound box of light brown sugar, over medium heat until bubbling. Then pour over the yams and bake for about 30 min. or until they are candied enough for you. You can always double the butter and brown sugar to accommodate the amount of yams you have and if you like alot of sauce.

Buy large yams/sweet potatoes, boil til tender. Let cool and get ready to assemble your dish--
buttered baking dish--
cinnamon
nutmeg
butter
brown sugar
white sugar
sprinkle of salt
syrup if wanted
Peel sweet potatoes ( one at a time, using a paring knife and pull the skin off ) then slice sweet potatoes about 1/2 inch thick placing slices in baking dish
ONE layer--
sprinkle the spices and sugars on that layer.
Peel another sweet potato and slice--placing slices on the first layer-- you'll learn with practice-- repeat until no more sweet potatoes. Dot dish with butter, use syrup if you want to finish-- but sprinkle white sugar last of all-- looks like snow.....
Bake til bubbly at 350 degrees-- maybe 30 minutes.
This is just about the most sure fire receipe there is.--
No, I don't use marshmallows-- think that was added in the North as in North of the Mason-Dixon Line. This receipe came from Georgia-- South of that M-D Line.
There is difference between yam and sweet potatoes-- but I don't remember what it is-- I've used both to good effect.
