take a good thick based pan, heat it till it gets very hot with a small amount of oil in it, add the steak (seasoned first to taste), leave it for about 2-3 minutes, it will be nice and golden brown/slightly charred, then turn it and do the same to the other side, now hold the fat down to the pan to get it nice and crispy on the outside and juicy in the middle...........let the steak sit for 5 minutes so the juices can relax back into the fibres, now you should have a med/rare steak which is nice and caramalised on the outside and nice and pink and juicy in the middle and not a drop of blood on the plate
Brown the steak on both sides over med hi heat and then de glaze the pan with your favorite wine and put a lid on it for about 4-5 minutes.
