Or should I serve something other than wine?

Answers:
Exerpt from World of Wine page:

Pro's choice for Jambalaya pairing:

Amanda .. We found a perfect inexpensive wine for jambalaya quite by accident. Try Turning Leaf's Red Zinfandel, there's no bitter aftertaste, and it's not so strong as to overpower the meal!

Jason .. We've had good luck with Aussie Shiraz. Try Rosemount Diamond Label or Leasingham Clare Valley. Definitely go for something brash with a lot of fruit. The earthier ones just die with jambalaya.

Jack .. Just had a 1996 Rabbit Ridge Sangiovese with it the other day and the combo worked nicely.

Dan .. BIG, spicy Red Zin.or an equally big Shiraz.

alt.food.wine ... Wine with Jambalaya? Easy = ZINFANDEL, Big, unabashed, spicy just like the Jambalaya.

alt.food.wine ... Beside various Sangiovese, I like it w/ a good strong Riesling. For an unusal combo, try a good mild but fraqent Japanese sake serve chill !

Other Answers:
i wouldn't serve wine w/ it, the spicyness of the Jambalaya would mess w/ the taste of the wine, unless u r makeing some really tame jambalaya, and then i would suggest a red wine.

lots of great recommendations listed there.

According to http://www.fabulousfoods.com/features/wine/bowlwine.html, Pinot Noir (red) or Chardonnay (white) go well with New Orleans food, but Pinot Noir is especially and particularly mentioned as a great accompaniment to jambalaya.

You can check out the site for yourself if you want. :-)

Hope this helps!

It's Jambalaya...it's Cajun...serve BEER!!!! I would go with a simple white chablis served over ice..Bon Appetit!

I've lived in New orleans - nothing really works with Jumbalaya other than bee-uah (beer)

serve the kind you like ... i might use a chilled rose

jambalaya is a cajun dish and being cajun i have only been places where beer was served. just like with a crawfish or crab boil beer is always a safe bet. good luck Without a doubt - Zinfandel. My recommendation would easily be Ravenswood Zinfandel, particularly the Vintner's Blend Zinfandel rather than the single vineyard Zin's they put out.
