It is hard to know how to answer this.

There are literally thousands of grape varieties used for making wine. Successful ones get propagated by farmers, and new varieties are being developed all the time.

In European countries the varieties used are mostly those developed there over the centuries, thus Italy mostly grows varieties different to those in France.

In the new world, however, all the wine grape varieties came from the old world, so they were ones chosen for a number of reasons, often in order to make wine like they did in Europe. So in California we see many French varieties - Cabernet Sauvignon, Merlot, Chardonnay, Sauvingnon Blanc, Pinot Noir, Syrah. And now there is a growing Italian influence with Sangiovese, Nebbiola etc being planted.

But the world wide demand for famous names has seen Italy growing Cabernet Sauvignon, Merlot, Chardonnay and other French varieties.

So, unless you can be more specific, I'd say that mostly nature is responsible for the appearance of different wine varieties*, and the French varieties have had most impact on the rest ofthe world

*Vine varieties cross, so in wild the black Cabernet Franc cross pollinated with the white Sauvignon Blanc and a new black variety, Cabernet Sauvignon was created. That proved successful so farmers grew and propagated it.

The Black Pinot Noir mutatates, thus Pinot Blanc and Pinot Grigio are genetically identical to each other, except one produces black grapes and the other two white.
