I'm making this for my boyfriend for Valentine's Day. Epicurious recommends an American Pinot, a Pouilly-Fume, or a Beaujolais. I'd prefer a good dry white over the Pinot or Beaujolais, because I'll put a little in the sauce. I'm not a fan of Chardonnay (especially the super buttery California ones.) Would a dry Prosecco pair well with this? If it matters, the tarragon flavor is very prevelant in this dish.

How about a nice fume blanc. I like the citrus flavors with the fish. You want one that wont get washed out by the tarragon.

For something less expensive, try a Spanish Rueda wine, such as Marques del Riscal white.

Experience Have you thought about using a blush. If you can get your hands on it I'd suggest Greco Di Tufo, produced by D'Anticheterre. It's an Italian wine.
