The basic mojito is made by putting mint leaves (probably 4-5 good size leaves) into a rocks glass and muddling them -- which is kind of mashing them up with a stick or spoon to bruise them and release their oils. Fill with ice.

Then, in a shaker filled with ice, add the juice of a half a lime, 2 oz of light rum and sugar to taste (bar syrup, a simple syrup of sugar and water works best as it isn't as gritty as regular sugar -- I use almost 2 oz. of bar syrup).

Shake to mix, strain over mint in glass and then top off with soda water.
