I am guessing that it has to do with the fermentation process of "brewing" grapes, fruit, honey, or grains in to an alcoholic drink.
Alcoholic beverages with a concentration of about 50% ethanol or greater (100 proof) are flammable liquids and easily ignited.

It is actually the alcohol vapor that burns, so to light one you will need to either use something with a high alcohol content (better than 80 proof generally does the trick, 100 proof almost always works), or carefully heat your alcohol. This works well for flaming rums and other 40 proof spirits. By heating it more alcohol is present in the vapor phase, and will ignight easier.
