T-bone is best grilled, but if you don't have a grill...
Season with kosher salt and black pepper. Sometimes I use garlic powder if I am to pan fry it, but it will burn on the grill. Let the steak sit for a few minutes to draw out some of the juices. Get a pan smoking hot and add the meat. Brown well on both sides and tun down the heat to finish. Ususally deep brown on both sides is enough for me.

If you have a grill
T-Bone and Sage Mushroom Sauce
1 2 lb. T-Bone steak, about 2 inches thick
2 T. olive oil
1 t. dried rosemary
1 T. cracked fresh black pepper
1 t. sea salt
Rub the steak with the olive oil. Rub in the spices and set aside for 30 minutes.
Preheat grill to high.
Sauce:
1/2 oz. dried mushrooms, any variety
1 1/2 C. boiling water
Soak the mushrooms for 20 - 30 minutes.
2 T. olive oil
2 T. fresh chopped sage
2 shallots chopped
4 oz. fresh shitake mushrooms
4 oz. button mushrooms
1/2 t. salt
1/2 C. heavy cream
1 T. sherry
2 T. fresh chopped parsley
Drain the mushrooms, reserving the liquid. Set the liquid aside. Squeeze mushrooms gently to remove excess water.
Heat the oil in a skillet over medium high heat. Add the shallots and cook for 30 seconds. Add the sage and and all of the mushrooms. Cook about 2 minutes and then add the reserved liquid. Cover and cook for 4 minutes.
Add the cream, salt and pepper. Simmer the sauce until it begins to thicken. Stir in the parsley and serve.
When you begin to make the sauce, throw the steaks on the grill and cook for about 8 minutes on each side for medium rare.
Serve the sauce on the side.
Gas or charcoal grill get it as hot as possible with the lid closed. While your grill is heating up, being that a t-bone is pretty tender anyway, just use coarse ground salt AN coarse ground pepper. Heavily salt and pepper both sides of the steak. When the grill is very hot, make sure the grill is clean, put the steak on the grill for a full 2 minutes per inch of thickness. DO NOT PICK AT IT WILTH A FORK as you will lose the juices and the steak will be dry. After 2 minutes take a pair on tongs and lift the steak and turn it over. Again don't use a fork as you will lose the juices. Let it grill for another 2 minutes for a medium well steak. After it's grilled remove the steak with tongs again and place on a plate and let it set for a few minutes so it relaxes. If you cut into it too quickly it will lose all of it's juice and it will tighten up and you will have a tough piece of meat. Bon Appetite
