Egg whites are used to sink sediment and solids like grape skins to the bottom of the wine so the wine can be siphoned off as a clearer liquid. The same technique is used to clarify bouillion and consomme.

Part of making wine is sterilizing the juice with a mild sulfur gas (you do this prior to adding wine yeast). Eggs are a decent source of sulfur. Personally though I'd stick to Campden Pelets myself.
I thought it was for clarification - might be wrong
